Encapsulated Tartlets
INGREDIENTS
Strawberry flavor:
COATING:
700g Mamma è Mia!
300g water
100g strawberry concentrate juice or syrup or strawberry gelato paste, red coloring.
CREAMY FILLING
200g strawberry puree
50g water
60g Mamma è Mia!
50g glucose.
Orange flavor:
COATING:
700g Mamma è Mia!
300g water
100g concentrated orange syrup, orange coloring.
CREAMY FILLING:
250g orange juice
90g Mamma è Mia!
50g glucose.
Chocolate flavor:
COATING:
700g Mamma è Mia!
400g milk
100g water
200g unsweetened cocoa powder, brown coloring.
CREAMY FILLING:
250g milk
60g Spolverciok Laped.
PROCEDURE
For the coating:
Blend all ingredients together and bring the mixture to a boil at +60/80°C.
For the creamy filling:
Blend and boil all ingredients together, then freeze.
DESSERT ASSEMBLY
Dip the frozen, frost-free fillings into the coating using a toothpick. Place directly onto the tartlets. Wait a few seconds and, with a gentle rotation, remove the toothpicks. Store and serve at +4°C.
